Anything is possible. First you would have to find a Cobra kit
manufacturer 
and find out if the Escape is an acceptable donor car.

Basically you are going to get a frame and a body.  You will have to
supply 
the axles, wheels and other things that are required.

It would be an expensive hybrid.
